Who would have thought that such a beautiful cake is so easy to make?  No one! And that’s It’s all part of the fun. With only a few simple and healthy ingredients, the batter is ready quickly. The cake is made with the fluffiest flour, lemon zest and juice. What’s the secret to evenly distributed blueberries? Before mixing the blueberries into the cake, toss them with some flour to keep them from sinking. A silken tofu and coconut cream base is used to make the vegan vanilla frosting, which does not contain butter. The result will be rich and creamy with an added bonus of being high in protein. You’ll find that the sponge is fluffy on the first day, and becomes moist and soft on the second day. It’s meant to be eaten both ways, so enjoy the change in texture and flavor.
